Preserves for home

The corona pandemic has forced us all to deal with changes in our private everyday lives and the business world. We restaurateurs had to adapt a lot and sometimes even reinvent ourselves.

Our family-run business was already broader than many others - restaurants, guest rooms, team events and kindergarten catering - unfortunately we also had to experience that everything came to a standstill directly or indirectly with contact restrictions.

 

We decided not to bury our heads in the sand and accepted the challenge of breaking new ground. An EU approval was applied for and we received this after the test had been carried out, and certification according to GLK (certificate of quality for small food companies) was also passed. - Both enable us to continue the kindergarten catering, but this also opens up the opportunity to sell food and dishes to stationary retail and even online trade.

The first dish is our Giros in Metaxa sauce according to Grandma's recipe. It has been part of our menu for almost 40 years and now it is produced almost unchanged, in WECK jars for use at home and even as a stock in our house. Further dishes and sauces are in development.

Production specifics:       

Pork neck is trimmed, seasoned and traditionally layered on a skewer. The meat skewer is attached to a vertical  rotary grill  cooked. The freshly cooked outer layers of the meat are continuously cut off and are ready to eat. Here the first production step is finished.  In the second step, our Metaxa sauce consisting of tomatoes, onions and Djuwetsch is refined and seasoned with Metaxa®.

In the third and final production step, the finished Giros meat and the sauce are filled into the jars by hand and then autoclaved at 121°C for 45 minutes. This ensures a shelf life of at least one year.

We produce in small batches, so there may be slight differences in taste from batch to batch.

 

Ingredients:                            

110g pork, tomatoes in tomato juice, peppers, onions, carrots, green beans, eggplant, peas, sunflower oil, rapeseed oil, water, allspice, curry powder, paprika powder, oregano, garlic, pepper, parsley, sugar, salt, citric acid, Metaxa® < 1 % (alcohol)

Storage:                          

No refrigerator necessary, but store in a cool and dry place, protect from direct sunlight/store in the refrigerator after opening and consume within a few days.

 

Durability:                         

at least 1 year after the production date (tested in a laboratory and declared as a fully preserved product).

Preparation:                   

Heat the contents in the microwave at 600 watts for 2-3 minutes.

 

Our serving suggestion:

Pour the contents into an ovenproof dish, refine with a dash of cream and bake in the oven with grated cheese until golden yellow. As a side dish, you can use anything you feel like, traditionally it is served with chips or rice.
